How Mars is developing new ingredients with AI

Mars, Inc. is applying advanced artificial intelligence tools to transform how new food ingredients are discovered and developed, with a focus on health and sustainability. The company is working with PIPA’s LEAP AI platform to construct knowledge graphs that integrate scientific literature, databases, and proprietary data to identify bioactive plant compounds and other novel ingredients more efficiently than traditional methods. By combining AI with fermentation science, Mars aims to expand the chemical diversity of plant-derived ingredients and improve functional food offerings, including alternative proteins with lower environmental impact. While AI expedites discovery and reduces experimental costs, Mars emphasizes that human oversight remains essential to validate findings and mitigate risks associated with AI-generated outputs. The company also uses AI across other areas, such as packaging design and product safety testing, and expects to publicly reveal initial ingredient discoveries within the next six months
