In a new Food Tank op-ed, Selena Ahmed, Ph.D., Global Executive Director of the Periodic Table of Food Initiative, reflects on food as more than nutrition: it is a biological record of ecosystems, agricultural practices, microbial life, climate, culture, and place. From tea agroforests in Yunnan to yak butter on the Tibetan Plateau, the piece illustrates how food’s molecular composition can carry signals from the landscapes and communities that produce it.
This perspective aligns closely with the work UC Davis and the Innovation Institute for Food and Health are advancing with PTFI. As PTFI’s North American Center of Excellence, IIFH is helping build the standardized tools, data infrastructure, and translational research capacity needed to better understand the biomolecular makeup of foods and how production practices may influence food quality, human health, and planetary outcomes. The article offers a compelling narrative frame for why this science matters: understanding food at the molecular level can help researchers, industry partners, and food system leaders make more evidence-based decisions about the foods we grow, formulate, invest in, and bring to market.
