Authored by the Innovation Institute for Food and Health, the AI Institute for Next Generation Food Systems (AIFS), and the Periodic Table of Food Initiative (PTFI), this report delves into AI’s transformative impact on deciphering the intricate interplay between food and health. From farm to table, AI is reshaping food systems across various domains including precision agriculture, ‘foodomics’, personalized nutrition as well as food safety, quality, and security. In this context, AI promises to expedite our understanding of food and pave the way for enhanced human and planetary health.
