Expanding Our Understanding of What’s in Our Food

A new University of California article highlights a powerful reality: we still know surprisingly little about the full chemical makeup of the foods we eat — and UC scientists are working to change that.

The piece features the Periodic Table of Food Initiative (PTFI), a global effort to characterize foods at a deep molecular level, moving beyond calories and macronutrients to map the thousands of bioactive compounds that influence human health. As the North American Center of Excellence for PTFI, UC Davis and IIFH play a central role in advancing this work — helping build the data infrastructure needed to transform nutrition science.

The article also spotlights Swap It Smart, a research initiative that leverages this expanding molecular knowledge to identify ingredient substitutions that can meaningfully reduce disease risk while maintaining taste and functionality. By combining food chemistry, health data, and advanced analytics, the project demonstrates how deeper food composition data can translate into practical, health-forward innovation.
