The UC Davis Office of Research has recently highlighted a startup co-founded by our Faculty Director, Justin Siegel, and their efforts to improve the nutrition of dietary proteins. Digestiva is focused on using enzymes to assist our body’s natural digestion of protein, allowing for greater nutritional benefit and uptake. Justin and Digestiva are further aiming to tailor enzymatic technology to enhance the health benefits of specific proteins, with potential applications including blood glucose control and inflammation reduction, among others.
